Recipe 3: Easy Vegetarian Chili

Ingredients:
1 tablespoon olive oil
1 white onion, diced
2 red bell pepper, diced
1 green bell pepper, diced
2 cloves garlic, minced
1 teaspoon ground cumin
2 teaspoon smoked paprika
1 teaspoon chili powder
1/2 teaspoon ground coriander
1/2 teaspoon ground cinnamon
1 (15-ounce) can of kidney beans, drained and rinsed

-1 Salmon fillet
-1 tsp. minced garlic

1. Preheat oven to 350 degrees F (175 degrees C). Grease a baking sheet with about 1 teaspoon of olive oil. Place the salmon fillet on the baking sheet, skin side down.

2. In a small bowl, mix together garlic, thyme, basil, oregano, salt, and pepper. Rub this mixture over the top of the salmon fillet.

3. Drizzle the remaining olive oil over the herb mixture. Bake in preheated oven for 25 minutes, or until the salmon is easily flaked with a fork.”
